Pot Roast

Carrots, Onion, Chuck Roast, Beef Broth, Water, Lipton Onion Soup Mix, Salt  & Pepper, Cream of Chicken Soup


Place carrots and onion in bottom of crock pot. Put roast on top, add 1 can beef broth, 1 can water, 1 can cream of chicken soup. Add salt & pepper to roast, then onion soup mix. Cook on low 6-8 hours. Serve with Mashed potatoes.

"Ground beef gets a boost of flavor from onion soup mix in this quick and easy slow cooker Salisbury steak recipe."
INGREDIENTS:
2 pounds lean ground beef
1 (1 ounce) envelope dry onion soup mix
1/2 cup Italian seasoned bread crumbs
1/4 cup milk
1/4 cup all-purpose flour
2 tablespoons vegetable oil
2 (10.75 ounce) cans condensed cream
of chicken soup
1 (1 ounce) packet dry au jus mix
3/4 cup water
DIRECTIONS:
1.In a large bowl, mix together the ground beef, onion soup mix, bread crumbs, and milk using your hands. Shape into 8 patties.
2.Heat the oil in a large skillet over medium-high heat. Dredge the patties in flour just to coat, and quickly brown on both sides in the hot skillet. Place browned patties into the slow cooker stacking alternately like a pyramid. In a medium bowl, mix together the cream of chicken soup, au jus mix, and water. Pour over the meat. Cook on the Low setting for 4 or 5 hours, until ground beef is well done.

Mongolian Beef

Mongolian Beef

Yield: 2 servings

Ingredients:

Vegetable oil
1/2 teaspoon minced fresh ginger
1 tablespoon minced garlic
1/2 cup low sodium soy sauce
1/2 cup water
2/3 cup dark brown sugar
1 (1-pound) flank steak
1/4 cup cornstarch
3 scallions (green parts only), sliced into 1-inch pieces

Directions:


Heat 2 teaspoons vegetable oil in a small saucepot over medium-low heat. Add the ginger and garlic and sauté until golden, about 2 minutes. Add the soy sauce and water, stirring to combine.
Stir in the brown sugar and increase the heat to medium. Bring the sauce to a boil for 3 minutes. Remove the sauce from the heat and set aside.
Slice the flank steak against the grain into 1/4-inch pieces, then toss it with the cornstarch. Place the coated pieces of steak in a sieve and shake off any excess cornstarch. Allow the steak to sit 10 for minutes.
Place a large sauté pan or wok over medium-high heat and add 1/2 cup vegetable oil. Once the oil is hot (but not smoking), add the beef to the pan and sauté for 2 minutes until it is seared on all sides but barely cooked in the center. Remove the steak from the pan with a slotted spoon and transfer it onto a paper towel-lined plate. Pour any excess oil out of the wok.
Place the sauté pan back over medium heat. Add the prepared sauce to the hot pan (it should come to a boil almost immediately), then add the reserved steak and cook at a boil, stirring constantly, 2 minutes. Add the sliced scallions, stirring to combine.

Cowboy Casserole

Cowboy Casserole

Ingredients

1 1/2 pounds ground beef (I used 80/20)
1 medium onion, chopped
3 cloves garlic, chopped
1 can (15.25oz) whole kernel corn, drained
1 can condensed cream of mushroom soup
2 cups cheddar cheese, shredded
1/2 cup milk
4 tablespoons sour cream
1 bag (30 oz) frozen tater tots (I used Ore-Ida Crispy Crowns)

Directions

1. Set out tater tots to thaw some.
2. Cook onion until translucent. Add garlic, cook 1 minute more. Add hamburger and cook until no longer pink.
3. In a small bowl mix together soup, sour cream and milk. Whisk until smooth. Add hamburger mixture and stir together until well mixed. Add corn and 1 cup of cheese. Gently mix to combine.
4. Grease 9x13 baking dish. Add 1/2 the bag of tater tots. Spoon hamburger mixture over the top. Add the rest of the tater tots and sprinkle the remaining 1/2 c. cheese over the top. Bake at 350 for 20-25 minutes.

Bacon Cheeseburger Soup

This was a winner! After trying this, Allie said I needed to open up my own restaurant!

INGREDIENTS

1 lb ground beef
1 lb bacon, cooked & crumbled
3/4 c. chopped onion
1 tsp dried basil
1 tsp dried parsley
4 Tbsp. butter, divided
3 c. chicken broth
4 c. peeled and diced potatoes
1/4 c. all purpose flour
2 c. shredded cheddar cheese
1 c. milk
1/2 c. heavy cream
3/4 tsp. salt
1/2 tsp. pepper
1/4 c. sour cream

DIRECTIONS
1. Brown the ground beef. Drain, set aside.
2. In the same pan, add 1 T butter and add onion, parsley, and basil. Saute until tender.
3. Add broth, potatoes and beef and bring to a boil. Reduce heat, cover and simmer 10-12 minutes or until potatoes are tender.
4. In small skillet melt remaining butter ( 3 T) and add the flour. Cook and stir for 2 minutes. Reduce heat to low.
5. Stir in the cheese, milk, heavy cream, salt and pepper. Cook and stir until cheese melts. Stir in the cooked, crumbled bacon. Remove from heat and blend in sour cream.

Easy Beef Enchiladas

Ingredients
  • 1 lb lean ground sirloin or lean ground beef
  • 1 tsp extra virgin olive oil
  • 1 onion, diced
  • 4 oz can diced green chilies
  • 2 — 14.5 oz cans red enchilada sauce
  • ¾ cup reduced-fat, shredded Mexican cheese, divided into ½ cup and ¼ cup
  • 8 — Large La Tortilla Factory® Smart & Delicious™ Low-Carb High Fiber Tortillas
Instructions
  1. Preheat oven to 375 degrees. Coat a 9" x 13" baking dish (or similar size pan) with nonstick cooking spray.
  2. Cook ground beef on medium heat until done. Drain meat and set aside.
  3. Add onion to the pan and cook for 1-2 minutes until soft.
  4. Next, add green chilies to onion and stir. Add cooked ground beef to onion and green chilies.
  5. Mix meat mixture with one can of enchilada sauce and ½ cup of Mexican cheese, stir and cook for 1-2 minutes.
  6. Spoon meat onto center of tortillas and roll. Place tortillas with the seam side facing down into pan.
  7. Cover tortillas with remaining can of enchilada sauce and remaining ½ cup shredded reduced-fat cheese.
  8. Bake for 20 minutes until cheese is melted and bubbly.

Sue's Taco Salad

Ingredients

  • 1 pound lean ground beef
  • 1 (1 ounce) package taco seasoning mix
  • 1/2 (14.5 ounce) package nacho-flavor tortilla chips
  • 2 cups shredded Cheddar cheese
  • 1/2 (15 ounce) can kidney beans, drained
  • 1/2 cup ranch-style salad dressing
  • chopped tomato
  • chopped lettuce
  • chopped green onion

Directions

  1. Place ground beef in a large, deep skillet. Cook over medium-high heat, stirring to crumble until well done; drain. Stir in taco seasoning mix. Set aside to cool.
  2. Place chips into a large bowl, and crush into bite-size pieces. Combine with seasoned meat, cheese, beans, tomatoes, lettuce, and green onions. Pour dressing over all, and toss to coat.

Chris' Bay Area Burger

Ingredients

  • 1 pound ground beef
  • 2 cloves garlic, minced
  • 2 tablespoons extra virgin olive oil
  • 1 1/2 teaspoons salt
  • 1 teaspoon freshly ground black pepper
  • 1/2 teaspoon dried basil leaves
  • 4 hamburger buns, split

Directions

  1. Preheat an outdoor grill for high heat. Mix together the ground beef, garlic, olive oil, salt, pepper, and basil. Divide into four balls, and flatten into patties.
  2. Cook the patties for about 3 to 5 minutes on each side, or to desired doneness. The internal temperature should be at least 160 degrees F (70 degrees C). Remove from grill and place onto hamburger buns. Top with desired toppings and condiments.

Taco Salad

Ingredients

  • 1 pound lean ground beef
  • 1 (1.25 ounce) package taco seasoning mix
  • 1 (16 ounce) can chili beans
  • 1 (16 ounce) bottle French dressing
  • 1 head iceberg lettuce
  • 1 (14.5 ounce) package tortilla chips
  • 2 cups shredded Cheddar cheese
  • 1 cup chopped tomatoes
  • 4 tablespoons sour cream
  • 1/2 cup prepared salsa

Directions

  1. In a large skillet over medium-high heat, brown the ground beef and drain excess fat. Stir in the taco seasoning, chili beans and French-style dressing. Fill the dressing bottle 2/3 full of water and add to the skillet. Bring to a boil, reduce heat and simmer for 15 minutes.
  2. Crush the bag of chips, open the bag, and toss the broken chips into a large bowl with the lettuce, cheese and tomatoes. When the meat mixture is done, combine it with the lettuce, tomatoes, chips and mix well. Then, add salsa and sour cream.

Slow Cooker Barbeque

Ingredients

  • 1 (3 pound) boneless chuck roast
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • salt and pepper to taste
  • 1 (18 ounce) bottle barbeque sauce

Directions

  1. Place roast into slow cooker. Sprinkle with garlic powder and onion powder, and season with salt and pepper. Pour barbeque sauce over meat. Cook on Low for 6 to 8 hours.
  2. Remove meat from slow cooker, shred, and return to slow cooker. Cook for 1 more hour. Serve hot.

Delicious Grilled Hamburgers

Ingredients

  • 1 pound lean ground beef
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon liquid smoke flavoring
  • 1 teaspoon garlic powder
  • 1 tablespoon olive oil
  • seasoned salt to taste

Directions

  1. Preheat a grill for high heat.
  2. In a medium bowl, lightly mix together the ground beef, Worcestershire sauce, liquid smoke and garlic powder. Form into 3 patties, handling the meat minimally. Brush both sides of each patty with some oil, and season with seasoned salt.
  3. Place the patties on the grill grate, and cook for about 5 minutes per side, until well done.

Sloppy Joes

Ingredients

  • 1 pound lean ground beef
  • 1/4 cup chopped onion
  • 1/4 cup chopped green bell pepper
  • 1/2 teaspoon garlic powder
  • 1 teaspoon prepared yellow mustard
  • 3/4 cup ketchup
  • 3 teaspoons brown sugar
  • salt to taste
  • ground black pepper to taste

Directions

  1. In a medium skillet over medium heat, brown the ground beef, onion, and green pepper; drain off liquids.
  2. Stir in the garlic powder, mustard, ketchup, and brown sugar; mix thoroughly. Reduce heat, and simmer for 30 minutes. Season with salt and pepper.
