Cafe Rio Copy Cat Cilantro Lime Dressing

This is SO good! Great on salads, tacos, to dip veggies in....so many ways to use it.

1 packet of Hidden Valley Buttermilk Ranch Dressing mix
1 c. Mayo
1/2 bunch of cilantro
1 tomatillo
1 jalapeno (with ribs and seeds removed if you don’t like the heat!)
3 cloves of garlic
1 lime (juiced)

Directions:
  • Mix all the ingredients in your blender.
  • Make it ahead of time to give the ingredients a chance to marry.

Ranch Dressing

Ingredients

  • 1 cup mayonnaise
  • 1/2 cup sour cream
  • 1/2 teaspoon dried chives
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon dried dill weed
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/8 teaspoon salt
  • 1/8 teaspoon ground black pepper

Directions

  1. In a large bowl, whisk together the mayonnaise, sour cream, chives, parsley, dill, garlic powder, onion powder, salt and pepper. Cover and refrigerate for 30 minutes before serving.

Hidden Valley Ranch Dressing

This tastes like the ranch dressing you get at restaurants (like Texas Roadhouse!)

15 Saltines
2 c. dry minced parsley flakes
1/2 c. minced onion
2 TBSP dill weed
1/4 c. onion salt
1/4 c. garlic salt
1/4 c. onion powder
1/4 c. garlic powder

Salad dressing:
1 TBSP mix
1 c. Mayo
1 c. buttermilk

Put crackers through blender on high until powdered. Add parsley, minced onion and dill weed. Blend again. Dump into bowl. Stir in onion salt, garlic salt, onion powder, and garlic powder. Put into container w/ tight-fitting lid.

Store dry mix @ room temp for up to 1 year. Makes 42 -  1 TBSP servings. Yield: 1 pint
