Slow Cooker Pulled Pork

Ingredients
  • 2½ lbs boneless, center-cut pork loin roast, trimmed of all fat
  • 2 medium onions, sliced thin
  • 2 Tbsp minced garlic
  • 1 Tbsp brown sugar
  • 1 Tbsp chili powder
  • ½ Tbsp kosher salt
  • 1 tsp cumin
  • ½ tsp ground cinnamon
  • 1 cup reduced-sodium chicken broth
  • 1 cup reduced-sugar BBQ sauce
Instructions
  1. Place the onions and minced garlic in the bottom of slow cooker.
  2. Pour chicken stock on top of onions and garlic.
  3. For the rub: In a small bowl, combine the brown sugar, chili powder, salt, cumin and cinnamon. Pat the pork loin roast down with paper towels to dry. Using clean hands, rub the spice mixture generously over pork loin roast.
  4. Place the meat on top of onions and garlic in slow cooker. Cover and cook pork for 8-10 hours on low, until pork is fork tender.
  5. Turn off slow cooker and move pork to a cutting board.
  6. Using a fine mesh strainer, hold strainer over a medium size glass bowl. Drain liquid from slow cooker through mesh strainer separating solids from liquids. Return the solids to the slow cooker and reserve the liquid.
  7. Using a fork and knife, start shredding the pork and return the shredded pork to the slow cooker.
  8. Add the low-sugar barbecue sauce to the slow cooker and cover the pork. Mix gently.
  9. Add the liquid from the port into the slow cooker. Use as much as needed to moisten the meat before serving. I usually add ¼ cup to ½ cup of the reserve liquid to the pork.

Barbecue Chicken



Ingredients:









(also could add some salt & pepper, maybe some onions!)

Directions

  1. Place chicken in a slow cooker. In a bowl, mix the barbecue sauce, Italian salad dressing, brown sugar, and Worcestershire sauce. Pour over the chicken.
  2. Cover, and cook 3 to 4 hours on High or 6 to 8 hours on Low.

Tangy Turkey & Swiss Sandwiches

Ingredients

  • 3/4 cup chopped red onion
  • 1 tablespoon dried thyme
  • 1/2 cup mayonnaise
  • 1/4 cup coarse-grain brown mustard
  •  
  • 8 slices country style French Bread
  • 6 tablespoons butter, softened
  • 1 pound thinly sliced roast turkey
  • 8 slices tomato
  • 8 slices Swiss cheese

Directions

  1. In a small bowl, stir together the red onion, thyme, mayonnaise and mustard. Spread some of this mixture onto one side of each slice of bread. Spread butter onto the other side of the slices of bread.
  2. Heat a large skillet over medium heat. Place 4 slices of the bread into the skillet with the butter side down. On each slice of bread, layer 1/4 of the sliced turkey, then 2 slices of tomato, and top with 2 slices of Swiss cheese. Place remaining slices of bread over the top with the butter side up. When the bottoms of the sandwiches are golden brown, flip over, and cook until golden on the other side.

Chris' Bay Area Burger

Ingredients

  • 1 pound ground beef
  • 2 cloves garlic, minced
  • 2 tablespoons extra virgin olive oil
  • 1 1/2 teaspoons salt
  • 1 teaspoon freshly ground black pepper
  • 1/2 teaspoon dried basil leaves
  • 4 hamburger buns, split

Directions

  1. Preheat an outdoor grill for high heat. Mix together the ground beef, garlic, olive oil, salt, pepper, and basil. Divide into four balls, and flatten into patties.
  2. Cook the patties for about 3 to 5 minutes on each side, or to desired doneness. The internal temperature should be at least 160 degrees F (70 degrees C). Remove from grill and place onto hamburger buns. Top with desired toppings and condiments.

Delicious Grilled Hamburgers

Ingredients

  • 1 pound lean ground beef
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon liquid smoke flavoring
  • 1 teaspoon garlic powder
  • 1 tablespoon olive oil
  • seasoned salt to taste

Directions

  1. Preheat a grill for high heat.
  2. In a medium bowl, lightly mix together the ground beef, Worcestershire sauce, liquid smoke and garlic powder. Form into 3 patties, handling the meat minimally. Brush both sides of each patty with some oil, and season with seasoned salt.
  3. Place the patties on the grill grate, and cook for about 5 minutes per side, until well done.

Sloppy Joes

Ingredients

  • 1 pound lean ground beef
  • 1/4 cup chopped onion
  • 1/4 cup chopped green bell pepper
  • 1/2 teaspoon garlic powder
  • 1 teaspoon prepared yellow mustard
  • 3/4 cup ketchup
  • 3 teaspoons brown sugar
  • salt to taste
  • ground black pepper to taste

Directions

  1. In a medium skillet over medium heat, brown the ground beef, onion, and green pepper; drain off liquids.
  2. Stir in the garlic powder, mustard, ketchup, and brown sugar; mix thoroughly. Reduce heat, and simmer for 30 minutes. Season with salt and pepper.

Ham Sandwiches

2 pkg Hawaiian rolls
1 lb shaved ham
8 oz sliced swiss cheese
cut rolls horizontally - put ham & cheese on

1/2 c. butter, melted
1 1/2. TBSP poppy seeds
2 TBSP minced onion
1 1/2 tsp mustard
1/2 tsp Worcestershire sauce
Pour mixture over sandwiches. Bake, covered @ 325 fro 15-20 min.

VARIATION
1/2 c butter, melted
2 TBSP minced onion
2 TBSP brown sugar
1 TBSP spicy brown mustard
2 tsp poppy seeds

Italian Melt

Ingredients
seeded Italian bread
garlic butter
oregano
shredded mozzarella cheese
sliced pepperoni

Directions
Simple. Basically another version of a grilled cheese. LOVE.

Chicken Club Sliders

Makes 8
Ingredients
Bacon
1/3 cup EVOO
1 lemon, juiced
2 large cloves garlic, finely chopped
pinch of thyme
pinch of parsley
pinch of sea salt and black pepper
1 1/2 pounds chicken

Directions
1. Fry or Bake the bacon
2. Preheat outdoor grill to med-high
3. Whisk together the EVOO, lemon juice, garlic, thyme, parsley, salt & pepper. Add the chicken and let marinade for at least 10 minutes. Grill, turning occasionally, until cooked through, 10 to 12 minutes.
3. Toast the buns, add bacon and other toppings (we like lettuce, onion, ranch & Frank's Hot Sauce)
