Cowboy Casserole

Ingredients
1 1/2 pounds ground beef (I used 80/20)
1 medium onion, chopped
3 cloves garlic, chopped
1 can (15.25oz) whole kernel corn, drained
1 can condensed cream of mushroom soup
2 cups cheddar cheese, shredded
1/2 cup milk
4 tablespoons sour cream
1 bag (30 oz) frozen tater tots (I used Ore-Ida Crispy Crowns)
Directions
1. Set out tater tots to thaw some.
2. Cook onion until translucent. Add garlic, cook 1 minute more. Add hamburger and cook until no longer pink.
3. In a small bowl mix together soup, sour cream and milk. Whisk until smooth. Add hamburger mixture and stir together until well mixed. Add corn and 1 cup of cheese. Gently mix to combine.
4. Grease 9x13 baking dish. Add 1/2 the bag of tater tots. Spoon hamburger mixture over the top. Add the rest of the tater tots and sprinkle the remaining 1/2 c. cheese over the top. Bake at 350 for 20-25 minutes.

Chicken, Black Bean & Rice Casserole
I wasn't too sure about this when I went to make it. I figured it would be another one of those new recipes where we eat a little bit and have tons of leftovers that never get eaten. Boy was I wrong! I thought it was quite tasty and since Derek ate half of the pan I think he did too! The kids didn't like it. Well, they didn't even try it because they are petrified of rice. Definitely a keeper for our meal rotation though.
Ingredients
1 c rice, cooked
2 1/2 c cooked, shredded chicken breast
15 oz can green enchilada sauce
15 oz can Rotel tomatoes
1/2 c sour cream
1 t salt
1/2 t pepper
1 t cumin
1/2 of a can of black beans, rinsed & drained
2 c shredded cheese
Directions
1. Preheat oven to 350 and spray 9x13 baking dish with cooking spray
2. Cook rice and layer on bottom of dish, put black beans on top of rice
3. Mix cooked chicken, enchilada sauce, sour cream, Rotel, salt, pepper, and cumin together in a mixing bowl. Add this mixture on top of the black beans
4. Top the casserole off with the shredded cheddar
5. Bake @ 350 for 30-35 minutes or until cheese is melted.

Broccoli Stove Top Casserole
recipe from Grandma Alice
4 c. cooked chicken
2 boxes broccoli spears, cut into pieces (cooked)
1 c. mayo
2 cans cream of chicken soup
1/2 tsp. lemon juice
2 c. shredded cheddar
1 box stove top stuffing
1 stick butter
Mix mayo, soup, cheese & lemon juice. In 9x13 pan, layer chicken, then broccoli, then spread mayo mixture all over. Top w/ stove top mixed w/ 1 stick melted butter. (In the stove top is a seasoning packet, only use 1/2 of it) Bake @ 350 for 30-45 min. until hot & lightly browned. Freezes well. ***bake 25 minutes before putting on the stove top mixture)***

1 lb ground beef or chicken (we like beef)
3/4 c. chopped onion
1 pkg. taco seasoning
3/4 c. water
1 16 oz. can refried beans
1 8 oz. jar taco sauce
2 1/2 c. corn chips, crushed
lettuce & chopped tomato if desired
cheese, as much as you like
Cook meat and onions, drain fat. Add seasonings and water. Let simmer according to seasoning mix directions. In bowl combine beans and taco sauce. Use 8" square pan. Layer ingredients starting w/ chips and ending w/ chips & cheese.
Bake @ 350 for 35-40 min. Serve w/ lettuce & tomato.
