Sweet Honey Chicken

Our friends, the Geetings, made this for us when they had us over for dinner last month. It was SO good. Great served with rice and steamed broccoli! It makes enough extra sauce to spoon over everything.

INGREDIENTS

3 lbs chicken
1 cup honey
1/2 cup soy sauce
1 clove garlic, chopped
2 TBSP ketchup
salt & pepper to taste

DIRECTIONS

Heat oven to 375.
Place chicken in glass baking dish. Sprinkle with salt & pepper.
Whisk together other ingredients to make the sauce.
Pour over chicken.
Bake for 1 hour or until done.

Chicken Fried Chicken & Country Gravy

Oh my heavens! This was Ahh-Mazing!!! It was a complete Southern meal, now one of our favorites, with chicken fried chicken, mashed potatoes, green beans and finished off with some banana pudding pie.

INGREDIENTS

5 boneless chicken breasts or thighs
1 tsp salt
2 tsp pepper
1 sleeve saltine crackers, crushed
1 cup flour
1/2 tsp baking powder
1/2 cup milk
2 large eggs, beaten
oil

DIRECTIONS

1. Flatten chicken with a mallet or rolling pin to about 1/4 inch thickness
2. Sprinkle with half of the salt and pepper
3. Combine cracker crumbs, flour and baking powder, and remaining salt and pepper in a bowl
4. Whisk together milk and eggs
5. Dredge chicken in cracker crumb mixture; dip in milk/egg mixture; then dredge in cracker mixture again
6. Pour oil 1/2 inch deep in 12 inch skillet. Heat on medium high heat. Fry chicken 10-15 minutes or until golden brown.

COUNTRY GRAVY

1/3 cup flour
2-3 Tablespoons pan drippings
3 cups milk
salt & pepper to taste


Carefully drain hot oil, leaving 2-3 Tablespoons plus cooked bits. Add 1/3 cup flour and mix together to make roux. Add milk, stir and bring to boil. Continue to stir until it reaches desired consistency.

Flatlander Chili

This chili rivals the other chili I have on here! Spicy AND sweet!

Ingredients

1 lb ground beef (next time I might add a little more)
1 46 oz tomato juice
1 29 oz tomato sauce
1 1/2 cup chopped onion
1 green bell pepper, chopped
1/4 cup chili powder
2 teaspoons cumin
1 1/2 teaspoons garlic powder
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon oregano
1/2 teaspoon sugar
dash of cayenne pepper
dash of celery salt
2 cans of chili beans

Directions

1. Cook ground beef.
2. Add all ingredients together. Heat to boiling and then let simmer for an hour.

Hot Spinach Queso Dip

Even the kid liked this!!

Ingredients

10 oz frozen chopped spinach, thawed and drained

1 lb Velveeta Cheese

8 oz light cream cheese

1 jar salsa

chopped cilantro, optional

Directions

Put it all in the crockpot, stirring occasionally.....until melted. Yummy!!

Loaded Smashed Taters

Huge hit in our house!

Ingredients

2 1/2 lb potatoes
1 cup milk
1/2 cup garlic & herb cream cheese
3 TBSP butter, softened
1 lb bacon, cooked & crumbled
1 cup (4 oz) shredded cheddar cheese
1/2 c parmesan cheese
3 green onions, chopped
2 tsp parsley flakes
1/4 tsp salt
1/4 tsp pepper

Directions

1. Place potatoes in large saucepan, add water, boil until tender

2. Drain water. Lightly mash potatoes, gradually adding milk, cream cheese and butter. Stir in bacon, cheeses, green onions, parsley, salt and pepper.

Cilantro Thai Grilled Chicken

Good flavor. Need to figure out a nice sauce for it. Turned out a little dry.

INGREDIENTS

2 garlic cloves, chopped

1/2 cup cilantro

1 TBSP soy sauce

1 TBSP sesame oil

4 boneless, skinless chicken breasts

DIRECTIONS

1. Place all ingredients, except chicken, in food processor and process until smooth.

2. Pour marinate over chicken breasts. Let marinate for at least 15 minutes in refrigerator.

3. Grill!

Basic Cheese Pizza Recipe

I have never liked many homemade pizzas. This pizza dough is AWESOME! It tastes similar to Pizza Huts Pan Crust Pizza, my favorite!! The sauce was okay, need to tweak it a bit to make it better.

INGREDIENTS

1 pkg dry yeast

1 cup luke warm water

1 tsp sugar

3 cups flour

1/2 tsp salt

1 TBSP olive oil

1/2 cup tomato puree

2 TBSP tomato paste

1 garlic clove, minced

1 TBSP basil

4 ounces mozzarella cheese

DIRECTIONS

Dough:
1. In a glass bowl, combine yeast, water and sugar

2. Stir to dissolve yeast and let "bloom" for 15 minutes

3. Stir in 1 cup flour, add salt, then stir in another cup of flour

4. Dump mixture onto kneading board and work in the last cup of flour; kneading until dough is soft and elastic, not sticky. Form dough into ball.  (I also added some parmesan cheese, oregano and garlic powder in this step!!!)

5. In another bowl pour in the olive oil and spread around

6. Coat dough in oil and cover bowl with damp cloth. Let rise for 40 minutes

7. Punch down dough and knead on board for about 2 minutes.

8. Lightly grease pan. Spread dough on. (makes 1 14 in. pizza)

Sauce:
1. Combine pureed tomatoes, tomato paste, garlic, and basil

2. Spread onto pizza dough

3. Top with cheese (and whatever other toppings you like) and bake @ 500 for  11-13 minutes.
